SWEET POTATO BLINIS WITH SMOKED SALMON, SOUR CREAM, CAVIAR AND CHIVES TOP WITH: PC Oven Smoked Atlantic Salmon For the sweet-potato blinis: 1 1/4 cups whole-wheat flour ½ cup buttermilk 1 tablespoon sugar 2 teaspoons baking powder 3/4 teaspoon baking soda 3/4 teaspoon salt 2 large eggs 1/4 cup vegetable oil plus additional for brushing griddle 1 small pinch ground nutmeg 1 small sweet potato, peeled, and grated (about 1/2 cups) Method: 1. In a large bowl, whisk together the eggs, buttermilk, and oil. 2.Mix together dry ingredients in a bowl, add wet mixture and whisk until smooth. Stir nutmeg until just combined. Fold in the sweet potato. If the batter seems too thick, add more buttermilk until it reaches the desired consistency (it should be thick but still pourable). 3. Place a large, greased griddle or pan over medium-high heat. Working in batches, spoon ‘quarter size’ portions of the batter onto the hot griddle and cook until the surface of the pancake is covered with bubbles, 2 to 3 minutes. Flip and cook the other side until golden, 1 to 2 minutes more. 4.
