Dr. Dérick Rousseau
is one of Canada's
premier scientists in the
area of food science
WHAT'S THE BEST WAY to eliminate or reduce
unhealthy trans fats from foods? Or fortify
dairy products with vitamin D? Dr. Dérick
Rousseau is one of Canada's premier scientists
in the area of food science. Seeking answers to
questions like these and more, The Rousseau
Labs at Ryerson focus on the physical chemical
nature of food and food additives.
Since arriving at Ryerson in 1998, he has
built strong relationships with the food industry
and made important research contributions.
He has produced more than 125 publications
and given more than 230 presentations. He
is also the founder and editor-in-chief of the
Elsevier journal, Food Structure.
Asked about his enduring commitment to
Ryerson, Rousseau singles out the juxtaposition
between fundamental and applied research.
"There is great fundamental research conducted
by members of the Faculty of Science. But there's
also this acknowledgement of the importance of
being able to conduct research that gives students
the possibility of improved job prospects."
With the formation of the Faculty of Science,
Rousseau says support has only strengthened.
"The dean and associate dean have assembled
a great team. The fact that they themselves
are also researchers makes a big difference,
in understanding the reality of conducting

Rousseau has proven his ability
to attract research funding from
multiple sources including:
* 2011-2016 - Seven NSERC grants.
* 2014-2015 - Ontario Centres
of Excellence-Voucher for
Innovation and Productivity (VIP).
Chemistry and Biology
* Some of his past research
funding sources include: the
Advanced Foods and Materials
Network, the Dairy Farmers of
Canada, the Canada Foundation
for Innovation and chocolatemakers, Cadbury and Hershey
* He continues to secure grants
from government and industry
In addition, Rousseau's work has
garnered awards including:
* 2014 - AOCS Timothy L.
