Cornmeal Waffles with Dried Cranberry Butter Serves: 6 | Preparation Time: 30 minutes 1/2 1/4 cup softened butter cup dried cranberries, finely chopped tablespoon maple syrup cups plain yellow cornmeal cup all-purpose flour tablespoon baking powder teaspoons salt tablespoon plus 1 teaspoon brown sugar 1 11/2 1 1 11/2 1 21/4 cups buttermilk 1/2 cup vegetable oil 2 large eggs Dried cranberries Maple syrup 1 2 3 4 Combine softened butter, chopped cranberries, and one tablespoon maple syrup and chill at least 20 minutes or until butter firms. Preheat waffle iron. Combine cornmeal and next five ingredients in a large bowl. Combine buttermilk and oil; add eggs and beat until blended. Stir buttermilk mixture into cornmeal mixture until batter is smooth. Brush hot waffle iron with oil, and bake waffles according to manufacturer’s instructions. To serve, top waffles with cranberry butter and dried cranberries. Drizzle with maple syrup. Fall 2007 71
