ChocolateCovered Pecan Toffee Serves: 12 to 16 | Prep time: 1 hour 1 cup (2 sticks) butter (do not substitute margarine) 2 cups firmly packed light brown sugar 1 cup chopped pecans 4 cups semisweet, milk, or white chocolate morsels Finely ground pecans (optional) 1 2 3 80 s o u t h e r n b re e z e . c o m Place butter and brown sugar in a large saucepan over medium heat, stirring frequently to prevent burning. Reduce heat to low, and cook 10 minutes, stirring occasionally. Remove from heat; stir in pecans. Spread mixture evenly onto a greased baking pan and let stand until set. (Chill or freeze to speed process.) Break into irregularshaped pieces. Place chocolate morsels in a large microwave-safe bowl. Microwave on 50% power 1 minute at a time, stirring after each minute, until chocolate melts. Dip toffee pieces into melted chocolate and arrange on a waxed-paper lined baking sheet. Sprinkle with ground pecans, if desired. Let stand until set, or refrigerate to harden chocolate.
