First Break Staff Editor Josh Flint Fortification: Why Bother? Aside from being able to market your products as “enriched,” why bother infusing flour with micro-ingredients? For this issue, I was able to speak about flour fortification at length with Dr. Godfrey Oakley, professor at Emory University and consultant to the Flour Fortification Initiative (see page 6). Oakley provides detailed information about folic acid fortification standards and the resulting drop in birth defects. While I was aware that folic acid consumption by pregnant women can decrease the chances of neural tube birth defects, I had no idea what a Folic acid greatly neural tube defect was. There are two common types of neural tube defects: spina bifida and anencephaly. Spina bifida. According to the Spina Bifida Association, this defect occurs when the spinal cord or spinal nerves bulge out through an opening in the spine. Spina bifida manifesta myelomeningocele is the rarest and most serious form. In this case, a segment of spinal nerves push out of the spinal canal against the underside of the skin. In the worst cases, the nerves protrude outside of the body. This condition can result in problems with walking, bladder control, and coordination. Anencephaly. According to WebMD, this is the second most common form of a neural tube defect. With this condition, major portions of the brain, skull, and scalp fail to form. Infants with this condition are born without a forebrain or a cerebrum. Babies with anencephaly rarely gain consciousness. Prevention In many cases, these conditions form six weeks into the pregnancy. Many women do not even realize they are pregnant until after six weeks. Therefore, eating those slices of white bread every day could make all the difference in giving birth to a healthy baby. The next time you pass the micro-ingredient feeder, remember what you are preventing, just by being a flour miller.
