Enriching bread, he said, has eliminated the deadly nutritional diseases pellagra and beriberi. Bair said that enriching flour with folic acid has meant that more than 1,300 babies are born healthy each year that otherwise would have had serious birth defects. Science Bair said that advances in biotechnology and other sciences will lead to a new green revolution in crop production equal to or greater than those achieved by Nobel Peace Prize winner Norman Borlaug. Global warming also will affect agriculture in ways that are still unclear, he said. Bair said innovations have always paved the way to improvements in the milling industry.
