Milling Journal - Q2 2008 - (Page 43) Asian Noodle Technology Wheat Marketing Center to host course July 22-25 in Portland, OR A hands-on Asian Noodle Technology course will be offered July 22-25 at the Wheat Marketing Center (WMC), Portland, OR. The course is specifically designed to improve noodle value through optimizing flour blends and using functional ingredients to provide a better understanding of noodle formulation, processing technology, and evaluation techniques, according to course director Dr. Gary Hou. Hou is technical manager and Asian Foods Specialist at WMC. “This course provides a unique platform where flour millers, noodle manufacturers, ingredient suppliers, researchers, and food scientists can interact and have opportunities to learn from each other. Value-Added Noodles Flour samples and food ingredients brought by the participants will be tested in various noodle products to demonstrate potential added values to noodles. Another part of this course involves participants in five hands-on workshops in the pilot noodle plant. “Consumer demand for healthier foods is increasing, especially in the United States,” Hou said. “This course will introduce several healthy noodle products by using some special raw materials and ingredients,” said Hou. Course Highlights According to Hou, participants will: • Manufacture five noodle types on the WMC’s pilot-scale noodle line. • Compare the process performance of noodles made from different types of flours and functional ingredients. • Evaluate finished product attributes for texture, color, and cooking quality. • Understand the effects of flour and functional ingredients on noodle quality. • Develop new healthy noodle products, including whole wheat noodles and high-fiber noodles.
