IGP’s Wheat, Flour Web Site New site introduces concepts related to marketing and quality evaluation The International Grains Program (IGP) at Kansas State University (KSU), Manhattan, and the North American Export Grain Association (NAEGA) on Aug. 7 unveiled a new web site—www.wheatflourbook. org—introducing users to concepts related to the marketing and quality evalua- www.wheatflourbook.org tion of wheat and flour. The web site is the result of a U.S. Department of Agriculture Market Access Program grant made available to IGP, in cooperation with the Wheat Marketing Center (WMC) and the Northern Crops Institute (NCI) by NAEGA’s Market Access Program Committee. The site contains explanations of common physical tests on wheat, as well as tests to evaluate flour functionality and product quality. Mark Fowler, director of technical services for IGP, managed the development of the web site. According to Fowler, wheatflourbook. org evolved from a textbook, Wheat and Flour Testing Methods: A Guide to Understanding Wheat and Flour Quality, published by the WMC in 2003. “This project is a great example of what can be accomplished by working together,” he said. “Working with the WMC and NCI, we have updated photos, added content, and in some cases, included video to illustrate the tests.” Contents Among the web site’s contents: • An introduction to the rules and terms incorporated into a standard grain contract, according to NAEGA. • Information on the various classes of wheat available from the United States, including sampling and grading procedures for export wheat shipments utilized by the Federal Grain Inspection Service. • Testing methods used to determine the marketing quality of wheat and flour.
