Milling Journal - Q3 2008 - (Page 18) Wheat Tempering and Surfactants KSU student study suggests surfactants speed tempering. This article is based on a presentation by Kelsey McGie, a milling science and management student in the Department of Grain Science and Industry at Kansas State University, Manhattan (620-228-2036). She presented results of a study on surfactant effectiveness at the International Association of Operative Millers (IAOM) 2008 Technical Conference in May in Orlando, FL. A surfactant added to tempering water for wheat can reduce tempering time by accelerating moisture penetration. In this study, several wheat kernel characteristics were measured to determine the effect of surfactants on wheat tempering. A surfactant is a wetting agent that reduces the surface tension of a liquid. In milling applications, surfactants may be used in tempering water to help soften the endosperm and facilitate the separation of bran, germ, and endosperm. Materials and Methods Hard red winter wheat was used in this study, along with a commercially-available food-grade surfactant. The wheat was cleaned with a Carter Day dockage tester, and measurements were taken using a Perten SKCS 4100 analyzer. The objective was to temper wheat to 15.5% moisture using four levels of surfactant in the tempering water: 1. The recommended amount of 0.27g of surfactant applied to 4,000g of clean wheat. Kelsey McGie 2. 0.54g of surfactant applied to 4,000g of wheat. 3. 1.08g of surfactant applied to 4,000g of wheat. 4. Control with no surfactant applied. The wheat was tempered for 10 minutes, then tested every 30 minutes for five hours.
