Technical Manager Rami Flamer has been milling at the “Shalom” Flour Mill in Petach Tikva, Israel since 1982. In this article, he discusses the control of condensation in mill systems. When dust from a dry milling material comes in contact with a condensate, such as on a cold metal surface, the dry material will become a paste or dough, and processes like fermentation will occur. Conditions for the development of microorganisms and molds will be very good, and in time, a form of cake will be created that serves as an incubator for insects. The surfaces on which the cake sits will roughen, causing even more milled material to stick. In such an environment, microorganisms and insects will grow very quickly, causing infestations that make the mill unhygienic and the milling process unstable.
