Milling Journal - Q3 2008 - (Page 37) est-humidity part of the day. Hold flour in the mill prior to transfer to the warehouse to allow cooling. • Control the day-night temperature differential. Consider insulating the bin wall, enclose the bins, or both. • Maintain movement of clean air in the bin to limit condensation on the bin wall. • Install fan and UV light systems to exchange air in the head space, as is done often in liquid sugar storage. In such devices, air is drawn into a sterile conditioner through a filter and blower housing, often with some type of filter including HEPA, carbon, or pleated. Air passes across UVC lamp(s), and contaminants such as yeast, mold, and other spores are irradiated by the ultraviolet light. The treated air is sent into the head space of the tank, reducing condensation and microbial development. Air is exhausted out of the tank through an air vent. • Other practices include: minimizing head space by keeping the bin full; using low-pressure cool, dry air to aerate bins; and transferring to bins when the air is cooler and/or drier. Flour Storage Relative to Moisture In the face of physical laws that control our environment, we must manage what is possible to control. Great care should be taken not to solve one problem while introducing a more critical challenge. Develop the best management practices first by thinking about your mill and customer environment.
