FO O D While we often think of grits as the most common staple of Southern cooking, the culinary traditions of the South are intertwined from various cultures and are very complicated. beyond Writ ten by Debbie GOlD grits The Many Varieties of Southern Cuisine When Americans’ collective stress level rises because of the economic recession, many people begin to seek out comfort foods. Southern food, for the majority of Americans, is considered “comfort food” or food that we associate with growing up or with home. it’s food that we turn to when we want or need to comfort ourselves. Many people associate southern cuisine with simple and hearty meals. On the other hand, many southern dishes are actually quite complex, with delicate flavors and ingredients that are sometimes hard to find outside the South. What is southern food? A Diverse and imported Cuisine there is no set definition because there is not one style of food that characterizes all of the food of the South. every area has its own creations brought by native Americans, europeans, and African traditions. the diversity of food is a reflection of the different cultures that settled into the different areas. you will not be able to find grits everywhere. red beans and rice in Louisiana is more like “hoppin’ john” (peas and rice) in South Carolina. barbecue sauce bases differ from vinegar to tomato to mustard. Marylanders prefer to steam their crab then add seasonings. Along the Gulf Coast, crabs are boiled in highly seasoned water. the native indians had beans, peas, squash, greens, onions, berries, nuts, squash, and melons. they hunted deer, elk, bison, squirrel, frogs, turtles, and fish. europeans brought with them pork and wheat, and the cooking style of the African Americans mixed to create southern food.
