The information given by all sensors is complementary and the combination of all responses results in a unique odour fingerprint. Aroma Quality Control of Onions In the food industry, manufacturers have constant pressure from consumers demanding regular and reproducible quality and flavour. Therefore, quality control must be accurately monitored at the production stage thanks to suitable tools that will fulfil the constraints of delay, objectivity and reliability. As an example, a FOX Electronic Nose (Alpha MOS, Toulouse, France) was used for the quality control of onions, with the aim of controlling the flavour quality of manufactured batches and following up aroma quality over time. Seven batches of onions, used as an ingredient in salsa, were analysed with a FOX sensor-array based Electronic Nose (Figure 2).
