It includes contracts, checklists, target markets and closing the sale. 3 credits CUL421 Leadership in the Foodservice Industry This course will apply leadership theories and principles to the foodservice industry. Emphasis will be placed on quality, communication, empowerment, goal setting, and change implementation as the foundations for decision making. 3 credits CUL422 Portfolio Through competencies developed with previous related coursework, students will develop a complete business plan for a minimum 100-seat restaurant. This project will include: market analysis and marketing strategy, operating budget, sales projections, opening inventories, capital equipment, standardized recipes and costing for all standardized recipes, menu and facilities design. The student will have the assistance of a Chef/Instructor to facilitate with the completion of the capstone restaurant project. Prerequisite: 164 credits completed in Culinary Management. 3 credits CUL423 Customer Service Expanding on what they have learned in the previous digital video editing course, students will create an edited project entirely on the desktop using non-linear editing and special effects software. Topics such as full resolution video, compression schemes, special effects compositing software, and high-resolution output will be discussed. Students will complete several projects to include special effects, transitions and digital audio. Prerequisite: FND130. 3 credits DMP319 Introduction to Computer Animation In this course the student will be introduced to the realm of computer animation utilizing a simple software package. Students will learn the basics of creating graphics and animation for broadcast television, corporate video, CD-ROM games, multimedia titles, print, and more. 3 credits DMP321 Producing and Directing Students become responsible for every phase of a magazine format production, culminating in a broadcast to the community through cable access, closed circuit, or other distribution avenues. Each student will assume a role on the production team in the pre-production, production, and post-production phases of the show. Almost every aspect of the video production curriculum is incorporated into this course, as the students draw on previously learned skills to produce a successful show. Prerequisites: DMP322, VP312. 3 credits DMP333 Advanced Non-Linear Editing This course covers editing techniques for non-linear editing such as layering of video, integration of graphics, multi-track audio mixing and equalization, special effects, and batch digitizing. Prerequisites: VP213, VP231. 3 credits DMP411 Video for Interactive Media This course studies the roles of the producer and director in all three phases of production. Each student will interact with the professional community and develop a project. Directing exercises enable the student to achieve a greater appreciation and understanding of the director’s role. 3 credits DMP322 Advanced ENG/EFP Students will learn how to select and integrate the appropriate video technology into an overall multimedia solution. Accessing video/audio on demand, streaming technologies and embedding video using authoring tools are the major topics of this course. Students produce a live Webcast as a class project. 3 credits DMP412 Broadcast Graphics This course covers the role of the artist in TV broadcast communications. Students produce graphics specifically for TV and video application utilizing a digital character generator and image manipulation software. 3 credits DMP415 Special Visual Effects This course is designed to blend foodservice applications with professionalism through a case study approach. Students will be given real hospitality cases/applications and asked to use problem solving techniques to more effectively prepare them in their career. 3 credits DMP211 Scriptwriting II This course explores client-based production from idea conception to final edit masters. Special emphasis is placed on professional conduct as well as on the application of high-end professional video production techniques. Prerequisites: VP214, VP215. 3 credits DMP323 Computer Animation II An examination of the script as an outline for concepts, production, and post-production. Scripts for commercials and industrial markets will be analyzed for content, structure and style. Prerequisite: VP131. 3 credits DMP314 Acting for Film and Video In this course students will utilize skills learned in previous animation courses to create industry driven projects. 3D modeling and editing skills will be enhanced. Prerequisite: DMP319. 3 credits DMP331 Corporate Television Production This course explores the various visual effects used in video production. Students produce, shoot, and edit special effects using electronic and digital tools. Emphasis is placed on creating transitions, and moving and manipulating the video image. Prerequisites: DMP332, DMP411. 3 credits DMP416 Multi-Camera Field Production In this course, the students will learn basic and advanced techniques of acting for the camera through in-class exercises and projects. Skills of improvisation and traditional techniques are employed to create believable characters and situations. The skills mastered in this class will help students communicate effectively with actors during video and film productions. This is a course to teach production personnel what it is like to be on the other side of the camera. 3 credits This course will teach the student to produce, write, budget, shoot, and edit a corporate or industrial video. The student will choose either an existing company or design one on his own. Once the company has been chosen or designed, the student will be required to design a proposal for a corporate video. The final video will need to be a minimum of 7 minutes and a maximum of 10 minutes in length. Prerequisites: DMP322, VP312, VP313. 3 credits Students work together as a team to produce remote live-to-tape multi-camera productions, such as concerts, sporting events, and plays.
