New challenges inspire new technologies. by larry adams 22 applianceDESIGN January 2009 ven though commercial appliances have a higher cost and lower volume than consumer appliances, makers of commercial equipment still must operate in a competitive environment, which means keeping a lid on cost. In the past, that might have also meant throttling back on technological innovations that would add cost to the product. But, times have changed. Purchasers of commercial appliances face new challenges that have altered their priorities. While the upfront, initial cost of a new piece of equipment is still a critical factor in making the purchasing decision, other issues have entered the equation, particularly in the segment of foodservice equipment. Growing energy costs and approaching energy efficiency regulations, along with equipment cost-of-use are changing the landscape. Also, worker skill level and labor costs have driven many user operators to explore E easier-to-use and more versatile equipment, such as the combi-ovens manufactured by Electrolux and Hobart. Changing consumer attitudes toward wanting healthier foods, or at least fresher food, has also been a driver behind foodservice innovations. Food can be cooked ahead, chilled, rethermed, and still served fresh – some times on the same plate. In addition, school systems around the country are changing lunch menus to offer healthier fare for their students and workers. Society’s shift away from oils with trans fats is changing not only the way things are fried, but also the equipment that fries them. While all of these trends have presented commercial appliance OEMs with new challenges, they have also given OEMs the green light to pursue more advanced technologies to address these issues.
