Traulsen, a refrigeration equipment manufacturer owned by ITW Food Equipment Group, uses the NAFEM data protocol on a number of its products including the reach-in INTELA-TRAUL equipped refrigerators; and the R & A Series, G Series and full-size undercounter models. The units are able to communicate with foodservice operators’ PC networks that operate with the open architecture of the NAFEM Data Communication Protocol. to add horsepower to a unit to keep the food at the correct temperature no matter how many times a door is opened and left open. Its blast chillers for instance are designed to take food through the temperature “danger zone” and quickly cool food to 40 DegF. Foodservice operators can chill between 50 lbs. and 200 lbs. of product in approximately 90 minutes with the Traulsen RBC Series blast chillers, which exceeds HACCP and FDA recommendations. John Davis, business development manager for Traulsen says that the unit’s controller can monitor different parameters that include overall temperature, door-open alarms, sensor failures and compressor run rates. “With this, you have a record of what happens.” Another area of safety and environmental stewardship is in the use of refrigerants. Many companies are switching away from refrigerants that affect the ozone and contribute to global warming. A method that some manufacturers are using is to incorporate a secondary loop refrigeration system, which can reduce the amount of conventional refrigerant used.
