Intertek, a third-party testing services company, tested the SDK at a national restaurant chain. The agency captured baseline data for two weeks without the use of an SDK and then measured and recorded data for another two-week period with the SDK. The testing demonstrated a 44 percent skip rate, meaning that 44 times out of 100 a defrost cycle was not needed. Another area that commercial appliance manufacturers are tackling is how to best save on water. One of the newest technologies to be released is from Hobart, a sister-company to Traulsen. The company introduced a new technology to its C-line of warewashers that is expected to cut water usage in half. The warewashers employ Hobart’s new Opti-Rinse System that uses rinse spray nozzles that save more than 50 percent of the water and energy compared to standard fan-spray nozzles. Phil Ratermann, general manager of Hobart’s Warewash unit, says many of today’s rinse nozzles produce a fan-spray pattern. The flow of the fan spray nozzles tend to be heavier on the outside edges and more atomized in the center. The OptiRinse nozzles rely on low and high pressures that cause the water stream to oscillate back and forth about 30 times per second in an S-pattern. Ratermann says the key to the new system is that it creates larger drops that result in improvement in heat transfer. The bigger drops hold heat longer than do smaller drops. The OptiRinse’s powerful spray and hotter water reduces the amount of water needed to clean the dishes. In tests, the system cut water consumption from about 1.49 gallons per rack to 0.74 gallons per rack. In addition to saving water it saves energy, as less water needs to be heated. More than candy Saving on energy is something for which all manufacturers are striving no matter the industry.
