This roundtable will provide an opportunity for open discussion on the problems and bottlenecks that exist within current traceability systems and for sharing experiences that will offer possible solutions for the entire food industry. As companies and their supply chains stretch farther and farther around the globe, audits become more complex. What are the advantages and disadvantages of a global audit standard, and can such a project be accomplished? How have recent industry, national and global events and regulations impacted this? Food safety is too important to leave to chance, which is not lost on food-product manufacturers. A safe food plant environment is impossible to achieve under unsanitary conditions, however. That being the case, processors need assurance that their equipment, employees and the plant itself is clean and free of pathogenic harborages. What technologies are available to help in these efforts?
