The oven alerts the cook when 80 percent of the food cycle is complete so that, if needed, the cook can refine the cooking process. If the cooking process is changed, that new profile can be saved into the oven’s memory. The cooking profile determines what technologies should be used to cook the food. The Speedcook oven combines different heating technologies: hot-air impingement, microwaves, and radiant heat in the upper oven. The bottom oven is a conventional convection oven. In the multi-modal upper oven, the selected profile determines how the controller cycles the various technologies on and off as needed. In the company’s patent, an example is given of the cooking cycle of a pizza. The pizza may normally take 30 minutes to cook, but only 3 minutes in the Speedcook oven. The cook cycle may begin with 20 seconds of high velocity hot-air flow that is delivered at 100 percent velocity and the microwave portion operates at 10 percent power level. This sequence may be followed by 10 seconds of cooking time where 10 percent air flow is utilized and no microwave power is used. This may then be followed by 1 minute where 100 percent air flow and 100 percent microwave power is used, followed by, one minute where 50 percent microwave power is used and 50 percent air flow is utilized. The company’s Airspeed technology distributes columns of air into the oven cavity that are circulated from the top and bottom. The air reheats as it passes through a heating element and dual blowers recirculate the air back into the cavity and this process continues until the food is cooked. Beshara says that the oven is more than just the technology that goes into the cooking. He calls the Speedcook a “work of art” that was designed with aesthetics in mind. The San Franciscobased design firm, frog design inc., was enlisted to create an oven with a warm, welcoming appeal. It features curved edges, hearth-shaped sculpted doors, and polished aluminum door handles. The appliance is available in several color schemes. “I believe that people buy brands that express something about themselves, or at least their desired persona,” Beshara says, “something that they are proud to have their friends over to see and use.
