It’s all right here waiting to be enjoyed— and it’s what the lure of the north woods is all about. the Lakes Here’s a favorite recipe from Chef & Company: Walleye & Wild Rice with Mushroom-Walnut Sauce 2 pounds walleye fillets 3 slices bacon, diced 1 cup chopped fresh mushrooms 1 ⁄4 cup minced onion 1 ⁄4 cup minced celery 2 cups cooked wild rice 2 Tablespoons melted butter Salt & pepper Cut fillets into serving-size pieces. Season with salt and pepper. Brown bacon, add mushrooms, celery, and onion. Cook until tender, 3-5 minutes. Stir in cooked rice and 1⁄2 teaspoon salt. Arrange fillets in single layer in well-greased baking dish. Place 1⁄2 cup rice mixture on each fillet. Drizzle melted butter over rice. Cover and bake at 375 degrees for 20 minutes. Mushroom-Walnut Sauce 3 Tablespoons butter 1 Tablespoon minced onion 1 cup sliced fresh mushrooms 3 Tablespoons flour 1 ⁄2 teaspoon dry mustard 1 ⁄2 teaspoon salt 1 ⁄4 teaspoon thyme 2 cups cream 1 ⁄4 cup toasted walnuts, halves or pieces Melt butter, add onion and mushrooms, sauté for 3-5 minutes. Stir in flour, mustard, salt, and thyme. Cook 2 minutes. Gradually whisk in cream. Cook, stirring constantly, until thick (about 3-5 minutes). Stir in walnuts.
