Aside from sharing recipes from a restaurant known for having a two-hour wait, “Vegetarian Traditions” shares anecdotes from Vutetakis’ travels and “foodlore” specific to the country that inspired the recipe, whether it’s Shiitake Mushroom Saute, Asparagus En Papillote, Spinach Walnut Torte or Pumpkin Walnut Baklava. “I was very careful in putting the book together to make it home kitchen friendly with simple techniques that allow you to not only focus on the flavor and textures, but also the healthy elements,” Vutetakis says. Farm to Table Akin to its name, Inn Season Café sources its ingredients from local farms and centers its dishes on whatever fruits and vegetables are in season. This brings more breadth to the overall menu and creates an element of surprise for guests who routinely frequent the restaurant. A mixture of tabletop advertising, menu descriptions and well-trained servers educate its patrons on where the ingredients are sourced – oftentimes from local farmers’ markets that offer organic varieties. Vutetakis, a strong proponent of the “farm-to-table revolution” sponsored the first organic farmers’ market a few blocks away from the restaurant. “We see the farmers as the real heroes behind our food because the secret to our cuisine is the quality of ingredients obtained at a local level,” he says. “One of the key focuses I have in the book is the connection between restaurants and the farm. It’s an incredible difference when you get that fresh food from the farm, and there is no real substitute for that.” He points to a time when farmers’ markets were the social centers of the community. “Democracy started in the markets of Athens,” Vutetakis says. “Farmers’ markets serve as places for people to gather, meet and learn about their local environment. And nothing is more exciting than preparing something that is only available a couple of weeks out of the year. I have a couple of recipes in the book about morel mushrooms. When you get those fresh morels, they’re like little treasures of the earth. We constantly make that connection between food that’s not only physically healthy but socially healthy, too, because you are supporting local people.” Whenever there were excesses in harvest, farmers would stop by Inn Season and drop off whatever extra product they had. Vutetakis would take it to the soup kitchens or distribute it out the front door, sometimes sending patrons home with fresh ears of corn in their hands. Although farmers’ markets are still prevalent in many countries, they seem to be a dying breed in the United States. “I’d like to see more distributors work with local farmers, but the economics make it a little difficult to manipulate a food system that really isn’t set up for that,” he says. “But the more we as people and chefs demand it, the more interest distributors and bigger restaurants will take in it.” After he sold Inn Season Café in 2002, Vutetakis relocated to San Diego, where sourcing ingredients from local farms is more commonplace, partly because the weather allows for farmers’ markets year-round. But he often returns to Michigan, where he teaches Yoga of Food classes in collaboration with cardiologist Dr. Michael Dangovian of the Wellness Training Institute, who integrates yoga and other meditative exercises into his practice. “My heart is still in Michigan,” Vutetakis says. “Even when I’m not physically there, I’m still connected to the people there.” food and drink • summer 201 • www.fooddrink-magazine.com 1 13 http://www.fooddrink-magazine.com
