Pardonne-moi, it’s called a Cronut—a newfangled pastry with French origins and American aspirations, much like its creator, Dominique Ansel. ¶ The baker moved to New York from Paris seven years ago and opened a 2,500-square-foot SoHo shop in 2011. His doughnut-croissant hybrid has whipped sweet tooths into a feeding frenzy since it came out of the fryer last month. ¶ Customers start lining up for Cronuts at 6 a.m. The store regularly sells out its daily production of 250 by 8:30 a.m., a halfhour after opening. Cronuts retail for $5, but a sweet secondary market has ballooned resale prices to as much as $40, according to one ad on Craigslist. ¶ “I taste one every day—not a whole one—to make sure it’s up to my standards,” said the 35-year-old Mr. Ansel, who worked for six years at Daniel before debuting his eponymous Spring Street bakery. He labored for two months testing a dozen different recipes before giving birth to the Cronut in May. He and his staff of 18 spend three days on each batch, frying a laminated, croissant-type dough in grapeseed oil. It’s then rolled in sugar, filled with cream and glazed. ¶ “It was not meant to be a star like this and take over the pastry case,” he added, noting that he sells 30 or so other desserts. ¶ Fervor is nothing new for the chef. In 2011, he introduced the DKA, a less buttery twist on a rare Breton pastry called the kouign-amann. That item also immediately attracted followers and is still a daily sellout. Mr. Ansel has buttressed the Cronut against copycats by trademarking the portmanteau. ¶ His recipe for success: exclusivity. ¶ “It’s really tasty,” he said, “and there’s nowhere else you can get it.” —adrianne pasquarelli general manager. Morgan Private Bank: John Elmes, 49, joined as managing director and senior business adviser, a newly created position. He was previously operating committee member and head of investments at GenSpring Family Offices. McGraw-Hill Education: Evan Bayh, 57, was appointed a board member of the educational publishing company. The former U.S. senator from Indiana will continue as a partner at McGuireWoods. Bed-Stuy Gateway Business Improvement District: Michael Lambert, 48, joined the nonprofit as executive director. He was previously executive director at the Jerome-Gun Hill BID and deputy director at the Mosholu Preservation Corp. Ludwig Institute for Cancer Research: David Lane, 60, joined the nonprofit as scientific director. He was previously chief scientist at Singapore’s Agency for Science, Technology and Research. Magnet Media: Drea Bernardi, 35, joined the content solutions provider as director of content development for Magnet Media Originals, a newly created position. She was previously media production coordinator at Mario Batali. Paul Kontonis, 42, joined as general manager of Magnet Media Originals, a newly created position. He was previously vice president and group director of brand content at Third Act. UnitedLex: Dave Canfield, 42, joined the legal consulting company as managing director of client solutions.
