Golf Inc - August 2008 - (Page 20) D an Ni ch ol a s , c o - pr i n c ip a l of Wheaton, Ill.-based PNH Architects, compared the casual dining environment clubs are seeking to that of the popular restaurant chain TGI Fridays. Ferry, Hayes & Allen recently completed a multi-phased clubhouse renovation at the member-owned Idle Hour Country Club in Macon, GA. The project included construction of a casual family grill and sports bar to complement the club dining area and was an instant hit with members. Idle Hour experienced a 35-percent increase in first year revenue from the new grill and a 25-percent increase in revenue during the first six months the sports bar was open, according to Jeff Orkus, CCN, club general manager. “About 70 percent of what we do now is geared towards families and kids, and the response has been unbelievable,” said Orkus. Upon opening in October 2007, the new sports bar was generating table wait times frequently around 45 minutes. “When you walked into our sports bar before, it looked like something out of ‘Caddyshack,’” he said. “Now it looks like a lively pub and that’s what people want.” At Su n Va l l e y R e s o r t i n Su n Valley, Idaho, construction of a new 54,000-square-foot clubhouse with a major emphasis on casual dining is expected to return significant food and beverage revenue increase, according to Jack Sibbach, director of sales and marketing. “We think we can possibly grow that business five-fold,” Sibbach said. “We’ve basically been selling hot dogs and wraps at a world-class golf course. When people get done playing golf there’s no incentive for them to sit and have a meal or a beer.” The new clubhouse, which will double as both a golf and Nordic facility, will feature both bar and restaurant settings with indoor and outdoor dining spaces. Tapping the fitness craze Though hardly a new trend at this stage, demand for new and improved fitness components continues to grow. “Fitness centers are still the most commonly requested addition we get,” Barrett said. Spas have grown in popularity and will continue to do so, according to Nicholas. “They’re being developed to much greater lengths,” he said. “At some clubs the spa may even be run by an outside agency.” Another continuing trend in clubhouse design, at both private and public clubs, is the inclusion of high-tech business centers.
