Chef Restrepo has travelled globally within his twenty three year career- from his own restaurant in Sao Paulo, to Spain, and England, where he began his career. Restrepo’s culinary influences include Spanish, French, and Italian citing his French teacher-chef in Argentina as a strong influence to his cooking. “He opened up my eyes a lot. The training was very intense. He was so accurate in terms of the value of ingredients. He taught me a lot.” Unlike the search in North America for the perfect rub, marinade or grill seasoning, Brazilians remain committed to a simple formula, with minimal fuss. “Brazilians usually just salt the meat. The longer I work in the kitchen, I know that the less you touch the food, the better,” offers Restrepo. It seems natural that to accompany the barbecued meat are lighter sides: freshly grilled vegetables, rice, feijoada (beans), pasta salad, greens and cold cuts beautifully displayed at the hot and cold fresco bars at Bolero.
