For Ritchie Breen and Jay Daniels co-owners of Saint Germain, which opened in Calgary in February 2006, it began much earlier. “When everyone else was going to shop class, I took home economics,” says Breen. Daniels has a similar story to tell. “In high school I would help my grandmother in the kitchen and my mother noticed my interest in food.” OW does a great restaurant begin? Does it begin when the first customers walks through the door? Does it begin when Their respective interests in food would lead them to work in the restaurant industry for many years at some of Calgary’s finest establishments. “One of the things about having been servers is that we already speak the language. The restaurant runs smoother because of our experience,” says Breen. With a dream of opening their own restaurant one day, Breen and Daniels were finally propelled by a convergence of factors. The area in which the restaurant now stands was undergoing major revitalization efforts. Calgarian’s knowledge and appreciation of food was growing, thanks in part to the Farmer’s Market. “When we were putting this restaurant together a lot of it had to do with the buzz around the Currie Barrack’s farmers market and the way, at least, southwest Calgary was dining,” says Daniels.
