We’re using the best that we can find and the freshest that we can find. It allows your cuisine to have a natural flow throughout the year.” The 5300 square foot space is sleek and cool but was planned to eliminate wasted time that servers sometimes spend searching for bottles of wine in a cellar. “Both of us came from the floor so it was important to us that the space work practically as well as aesthetically,” says Breen. A wine list that focuses on France but includes New World wines is something customers appreciate. For these restaurateurs, though, the real satisfaction comes from an appreciation for food itself. “It’s a passion for making the best starting with the best. Everyone around the world understands good food whether it’s in Bengal, France, Thailand or Calgary,” says Breen.
