When referring to new world wines not from this region, the term “sparkling wine” is used. Remember, all Champagne is wine, but not all wine is Champagne! SIGNUP CHAMPAGNE Vintage: Made from a single harvest, (no less than three years old) Non-Vintage: At least 15 months old, blend of different years Process: Combining Chardonnay, Pinot Noir and Pinot Meunier grapes into a low-alcohol wine. This is combined with sugar and yeast into alcohol and carbon dioxide gas. When the carbon dioxide is trapped in the bottle, it makes the signature bubbles. Grand Cru: Made up of the highest ranked villages and vineyards in the Champagne region. Premier Cru: Made up of 43 villages, classified as produces all three grape varieties. Blanc des Noirs: Champagne made with both Pinot Noir and Pinot Meunier grapes. Rose: The colour (ranging from pale ‘onion skin’ to rich pink), gets this way from the contact of the grape juice with the grape skins. The longer the contact, the deeper the colour.
