Skating with my mother as a child at night at our community rink. I vividly recall the crisp chill of the air, the cutting and swooshing sounds of our skates against the quiet of the night. I can see the black sky, the stars, the white mounds of snow piled up against the boards of the rink. I especially remember the love and warmth my mother and I shared, our feeling of freedom, our smiles, and laughter. Basil-Pesto Smoked Turkey Sandwiches Ingredients: Basil pesto Whole wheat or rye bread Grainy mustard Mayonnaise Smoked Turkey Breast Basil Pesto: 2 cups basil leaves washed 1 tsp.salt 1 cup olive oil ½ cup pine nuts ¼ cup pecorino or parmesan cheese (you may omit) 1 head garlic (10-12 cloves; or less if you desire) 1. Grind all ingredients (except cheese) in a food processor until smooth. 2. Add cheese Sandwiches: 1. Spread mayonnaise and mustard on one side of bread. 2. Spread basil pesto on the other side of bread 3.Add a few slices of smoked turkey 4. Fold one slice of bread onto another slice 5.
