>mí casa Too many of us use eating as a way of mere sustenance, gobbling down every bite just to fill our screaming bellies. You’ve heard the phrase “Eat to live, don’t live to eat,” right? I can’t think of a more boring motto that dulls one of the most exciting and sensuous acts we do on a daily basis. The new motto is, “Wake up tongue, time for pleasure!” Don’t get the wrong idea, though; I can see many of you and your dirty little minds working on how to twist this in your perverse ways. All I’m saying is that my gift to you this year is a wake-up call and a bit of hedonism to go along with it. If I’m going to teach you to enjoy food, then I’m going right for the jugular and pairing chocolate with wine! What is it about the combination of wine and chocolate that just oozes thoughts of something passionate, maybe even sexual? For foodies; there is no question that this would be the ultimate pairing, the coup de grâce if you will, embracing all senses while fulfilling the pleasure of eating! With Valentine’s Day around the corner, it’s only appropriate to treat yourself and/or your significant other to a little food foreplay. To accomplish this devilish act, start by choosing some fine artisan chocolates. My preference is those produced by Beth Tully of CoCoa DolCe. I’m convinced that she has hot cocoa running through her veins and I know for a fact that there is chocolate under her nails! When looking for the best in anything, find the most passionate person in his or her field. Beth Tully is just such an individual. Enough tooting her cocoa cacophone, though; you still need to pick up some wine. One of the most important things to consider is finding a wine shop with knowledgeable wine geeks. If they throw out some words you’re not understanding, you’re probably in the right place. Here are a few wines that would be suitable for chocolate pairings: ReD Wines—Cabernet, Zinfandel, Malbec and Shiraz White Wines—Sparkling and Auslese Riesling DesseRt Wines—Ports, Sweet Sherry and Framboise calling out the senseless written by > Jamie Stratton Once you have everything in place, follow these five steps to better sensations this Valentine’s Day: Sight—Look at the color variations in the chocolates, their designs and textures. What does the wine look like? Is it bubbly or still? Dark red, purple or some other color? If you’re doing the entertaining, this is your chance to size your guest up as well. Dressed to kill and appetizing? Smell—Before you dive into the goods, take a moment to smell all that the chocolate and wine have to offer. Different aromas of fruits, spices, herbs and earth can be apparent here. Now it’s time to also take a smell survey of your partner. Natural pheromones or synthetically produced? touch—Notice the smooth, velvety texture of chocolate as it melts and the way the wine cleans your tongue or dances on it. While you are enjoying your treats reach out and brush your fingers across some lips. Preferably not your own. hearing—Okay, this is a stretch because chocolate does not make much noise, but you do when you’re enjoying it. Hopefully by now there are some moans to accompany what you have started. taSte—Too much to say here, but know that sensory overload is possible when it comes to this endeavor. Once you’ve had your fill of chocolate and wine, it’s time to work off some of the calories.
