Women's Focus - February 2008 - (Page 54) A Romantic Valentine’s Dinner … FOR You can’t find a babysitter this Valentine’s Day and the kids are too young to shoo off to their room with Harry Potter on DVD and a TV dinner. You may be thinking romance is just not in the cards for you and your sweetheart this year. You are not alone. As the parents of an elementary school daughter and a five-month-old, my husband and I have forgotten what romance is…was…whatever. Let’s just say, it’s not in our immediate future. But you know what? Our crazy, chaotic house is chock-full of love. It’s the kind of love where a gummy grin makes your heart go pitter-pat; where a crooked Valentine cut from construction paper and covered in powdery glitter (that I’ll have to vacuum up tomorrow) takes the place of something sparkly in a velvet box. My Prince Charming still takes my breath away, but now it’s when I see his eyes shine as he tosses our little one in the air and laughs. That’s what sweeps me off my feet these days. That’s a lotta love. And I think this year the whole family should celebrate it. If you are looking at a romance-free Valentine’s Day, take some time to enjoy the love you have with your whole crazy, noisy, chaotic, drooling, wonderful family. Get out the board games and fix a meal everyone will be excited about. I guarantee your kids will enjoy it much more than a night at home with the sitter, and it may just turn out to be your most memorable Valentine’s Day yet. Here are a few recipes you may want to consider. F our! ~LISA HENSHALL APPETIZER MAIN COURSE Cream Cheese ‘Pate’ (Let the kids make this one!) Shrimp Scampi Pasta 1 lb. pasta (I prefer a whole grain penne pasta) 4 tablespoons sweet cream butter 4 tablespoons olive oil (separated into 2 and 2 tablespoons) 1 leek, finely diced 2 cloves garlic, sliced 1 pound peeled and deveined shrimp 1/2 cup white wine 1 lemon, juiced Put a large pot of water on the stove to boil. Once boiling, add some salt and the pasta. Stir and cover. When the water has returned to a One cream cheese block (room temperature) 3 or 4 tablespoons strawberry jam Crackers Place cream cheese block on plate and smear jam on top. Surround with crackers and serve. DESSERT boil, cook for 6 to 8 minutes. Then drain the pasta, but keep about a cup of water with it in the pot. Set aside. Next, in a very large skillet or pan, melt 2 tablespoons butter with 2 tablespoons of the olive oil over medium-high heat. Saute your leek and garlic together for about 4 minutes. Season the shrimp with salt and pepper and add them to your skillet. Add the wine and lemon juice and bring to a boil. Add 2 tablespoons butter and remaining olive oil. When the butter has melted, add the cooked pasta and reserved pasta water to the pan. Stir well and serve hot, with loads of Parmesan cheese (better known as “shake cheese” in our house). Red Hot Dessert 1 can diced pineapple 1 tub Cool Whip 1 bag Red Hots Combine the Red Hots and pineapple in a container and refrigerate overnight. Mix with Cool Whip. This makes a fluffy pink dessert that is ready to serve and one that the kids will like.
