LYNCH I n the 1920s, the Sunnyside School in the Chipley community was one of few buildings with a Delco generator to fuel its electrical system on special occasions. Heated with coal-burning stoves, the school was constructed to consolidate smaller, one-room schools in northern Harris County. Like many homes and buildings in rural Georgia, the school began receiving electricity through the local electric co-op in the 1930s with the arrival of the Rural Electrification Administration. The name of the Chipley community changed to Pine Mountain in the 1960s. But the Sunnyside School has remained a constant presence, providing a gathering place for Harris County residents. The Sunnyside Historical Foundation Inc. is committed to the preservation of the Sunnyside School building, listed on the National Register of Historic Places. In an effort to generate funds for this project, they have published the “Sunnyside Community Cooks” cookbook with more than 450 recipes, some of which were handed down by the school’s original teachers and students. Alongside Southern favorites, you’ll find wonderful recipes like Dean’s Blackberry Wine Cake, Kahlua Pecan Pie, Pear Relish, Plum Sweet and Sour Sauce, and Bread and Butter Pickles. If you’re craving something warm and healthy, this hearty Ratatouille recipe by Cordelia Stipe is sure to hit the spot. Ratatouille 1 pound eggplant, peeled, cut in 1/2-inch chunks 1 pound zucchini, cut in 1/2-inch chunks Salt 8-10 tablespoons extra-virgin olive oil, divided 1 pound onion, sliced 1/4 pound red or green peppers, seeded, 1/2-inch pieces 1 tablespoon garlic, minced 2 pounds tomatoes, peeled, seeded, quartered Freshly ground black pepper, to taste Toss eggplant and zucchini chunks with salt and let drain for 30 minutes. Heat 4 tablespoons of olive oil in a large sauté pan, add one batch of eggplant and zucchini and brown on all sides. Remove to a strainer set over a pan to catch excess oil. Repeat with remaining eggplant and zucchini, using oil from bowl, if necessary. In 2 tablespoons oil, sauté onion and peppers until wilted and lightly colored. Stir in garlic and tomatoes and cover pan. Cook 3-4 minutes, uncover and cook until liquid has evaporated. Add eggplant and zucchini to pan. Cover and simmer 10-15 minutes, stirring occasionally. Uncover and cook until the juices are reduced. Season with salt and pepper. Serve hot as a side dish, as a sauce for pasta or serve cold as an appetizer. Serves 6-8.
