Greens, glorious greens!

Collards, turnip greens, kale and spinach
are at the heart of Southern cooking

hink back to your grandmother's
kitchen, filled with the rich aroma
of collard greens, turnip greens or
curly mustard greens simmering with
plenty of smoked pork. Then imagine kale, chard or spinach, which are
used in lighter, more contemporary
recipes. From the old to the new, no
other food means as much to true
Southern cuisine as greens.
Greens-especially collards or
turnips cooked in traditional fashion-get their primary flavor from
smoke-cured meat. A pot of collard
greens often has enough smokecured meat cooking in it that it makes
a whole meal. Cuts of smoked ham,
bacon, hog jowl or salt-cured country
ham long have been the go-to meats
for getting true Southern flavor. More
recent versions of these classic dishes
feature smoked turkey for a lighter,
healthier way to get that old-fashioned flavor.
In old-time recipes, a pot of
greens often cooks on the stove most

of the day. This is because greens-
especially collards-are slightly bitter
and tough, thus requiring the long
cooking time to achieve the correct
flavor and texture. If you are seeking
to uphold the tradition of true Southern greens in your kitchen, you will
need plenty of smoked meat and a
generous helping of patience.
One of the great things about
greens is their versatility. Contemporary interpretations of cooked greens
omit the salt and fat of smoked meats
in favor of lighter, leaner cuts of meat
with fresh, healthy ingredients. Some
cooks include a variety of aromatic
vegetables, such as sweet onion; bell,
poblano, serrano or jalapeño peppers; and fresh tomatoes. Building
on that foundation, fresh herbs, such
as cilantro or oregano, and spices,
such as red pepper flakes and fresh,

Traditional Collard Greens With
Country Ham
4 tablespoons bacon drippings
1-1/2 cups sweet onion, diced
1 cup country ham, diced
2 cloves garlic, crushed
1/2 teaspoon crushed red pepper
6 cups pork stock (recipe follows)
2 pounds collard greens, shredded
Salt and pepper, to taste
