Betty Crocker Brunch - (Page 11) egg bakes & more Do-AheAD • eASy Tips Upside-Down Banana-Walnut French Toast Prep Time: 15 Minutes Start to Finish: 2 Hours Servings: 10 » 1½ ½ ¼ ½ 3 1 6 1½ 1 cups packed brown sugar cup butter or margarine, melted cup corn syrup cup chopped walnuts medium bananas, sliced loaf (about 1 lb) sliced unfrosted firm cinnamon bread eggs cups milk teaspoon vanilla Do-AheAD This is a perfect dish for a company brunch. Do the work the night before, and bake the French toast while you set the table and prepare the rest of the meal in the morning. SpeciAl Touch Sprinkle powdered sugar over the French toast before serving. 1. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray or grease with shortening. In large bowl, stir together brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon banana mixture into baking dish. 2. Reserve heels of bread for another use. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed. 3. In medium bowl, beat eggs, milk and vanilla with wire whisk until well mixed. Pour over bread. Cover tightly; refrigerate at least 1 hour but no longer than 24 hours. 4. Heat oven to 325°F. Uncover bread mixture; bake 45 to 55 minutes or until knife inserted in center comes out clean. Serve portions upside down, spooning sauce from bottom of dish over each serving. High Altitude (3500-6500 ft): Heat oven to 350°F. Bake 40 to 45 minutes.
