Spring Get-Togethers - (Page 63) Easy Low Fat the main event Baked Ham with Orange-Mustard Glaze Prep Time: 20 Minutes Start to Finish: 3 Hours Servings: 16 servings Piglets In Blankets Prep Time: 15 Minutes Start to Finish: 30 Minutes Servings: 8 servings 1 1 1 2⁄3 1⁄3 3 cooked bone-in ham (6 to 8 lb) cup water cup orange juice cup orange marmalade cup stone-ground mustard teaspoons ground mustard 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls 24 cooked cocktail wieners Ketchup or sweet-and-sour sauce 1. Heat oven to 375°F. Grease cookie sheet. Unroll dough; separate into 8 triangles. Cut each triangle into 3 smaller triangles. 2. Place 1 wiener on shortest side of each triangle; roll up to opposite point. Place point side down on cookie sheet. 3. Bake 11 to 15 minutes or until deep golden brown. Immediately remove from cookie sheet. Serve with ketchup. Heat oven to 325°F. Place ham, fat side up, in disposable roasting pan (placed on baking pan) or on rack in shallow roasting pan. Pour water into pan. Bake 1 hour 2. Remove ham from oven. Add orange juice to roasting pan. If necessary, trim fat from ham. Score ham diagonally at 1-inch intervals, cutting about ¼ inch deep; score in opposite direction to form diamond shapes. Insert meat thermometer so bulb reaches center of thickest part of ham but does not rest in fat or on bone. 3. In small bowl, mix marmalade and mustards until blended. Brush half of marmalade mixture over ham; baste with pan juices. Return to oven; bake 1 hour to 1 hour 30 minutes or until meat thermometer registers 140°F, basting frequently with pan juices and brushing with remaining marmalade mixture. 4. Let ham stand in roasting pan 15 minutes before slicing, basting frequently with pan juices.
