The shopping list The shopping list is based on a family of four and assumes you have on hand extra virgin olive oil, butter, red wine vinegar, salt, a peppermill filled with whole black peppercorns, and flour. 4 six-oz. salmon fillets 6 six-oz. boneless, skinless chicken breasts Small package blue cheese Small package feta cheese 1 small container dried, ground sage 1 small container dried bay leaves 1 small jar nonpareil capers 1 small jar black olive tapenade 1 lb. green lentils 1 small jar Dijon mustard 1 small bottle of pure maple syrup 1 bottle dry vermouth or dry, light white wine 1 bottle drinking (not cooking) sherry 6-7 lbs. butternut squash 2 lemons 2 limes 2 mandarins or 1 large orange 1 medium yellow onion 3 shallots 1 bunch radishes 1 bunch fresh parsley 1 small bunch fresh thyme 1 bunch fresh chives (or green onion) 1 head of celery 2 medium carrots 1 small bag or container baby spinach 1 small bag or container arugula 1 small bag or container baby greens 1 small bag or container or head of romaine lettuce 1 loaf peasant bread (buy later in week) JULY AUGUST 2008 GRAND 57 The menu I chose two separate, but related, dinner menus with proportions that would yield enough leftovers to have two more meals. This is about as ambitious as you would want to get. Working too long and hard in the kitchen reduces some of the day’s pleasure! Dinner #1 • Sautéed Fillet of Salmon with Lime and Chive Butter on a bed of baby spinach (vegetarians can substitute Portobello mushrooms for the salmon) • Lentil and Vegetable Salad Dinner #2 • Grilled Breast of Chicken with Lemon-Caper Vinaigrette on a bed of arugula (vegetarians can substitute grilled thick eggplant slices) • Mashed Maple Butternut Squash Leftover meal #1 • Lentil, Chicken and Vegetable Salad with crumbled feta cheese and cherry tomatoes on a bed of baby greens • Crostini with black olive tapenade Photography by Teresa Newman Leftover meal #2 • Butternut Squash Soup • Green Salad tossed with blue cheese vinaigrette • Crusty peasant bread with olive oil and balsamic vinegar
