A mixed bag of people, many with differing tastes, preferences, dietary restrictions and allergies—and many arriving or leaving at random times—can create a menu planning nightmare. The solution? Two nutritious and easy meals (the second made with leftovers from the first) that are also versatile enough to offer simple options for individual needs. I’ve also included a “things to have on hand” shopping list, and suggestions for meals and snacks that can be prepared at a moment’s notice for those who will inevitably be arriving and leaving at different times, as well as for the early risers and the night owls.
