Mariner - Fall 2007 - (Page 15) NEWS NOTES CULINARY ARTS CENTER ® Something new is cooking at Club HAL. ms Eurodam introduces new décor. The staterooms and suites of the new Signature-class ms Eurodam will offer something new to Mariners familiar with other ships—an elegantly simple décor that’s more monochromatic, accented with bursts of color. Rich wood tones, burnished nickel fixtures—the new design is contemporary and fresh while retaining a tailored, Euroclassic aesthetic. The Eurodam, whose keel was laid in late March, is scheduled to debut in June 2008. Stay tuned for future updates. Self-guided iPod® art tours now available on iTunes.® Holland America Line’s iPod-based shipboard art tours are now available as free downloads from iTunes. Each 30- to 40-minute tour includes interviews with artists, background music and photo images displayed on the iPod screen. To download the podcasts from the iTunes homepage, search Holland America Line, click the small gray arrow on the right side, then click the “Get Episode” button by the selected ship tour. Deal signed for second Signature-class ship. Close on the heels of the ms Eurodam will be her newly announced sister ship, scheduled for delivery in fall 2010. The currently unnamed ship will offer the same amenities as the Eurodam, including an expanded Greenhouse Spa & Salon, a topside 144-seat specialty restaurant and four new forward-facing “panorama” staterooms. Now kids from three to 17 can learn to cook with Holland America Line’s new Culinary Arts program offered by Club HAL and the Culinary Arts Center presented by Food & Wine magazine. Complimentary 45-minute classes will be taught by shipboard chefs in the Culinary Arts Center. Dishes taught span breakfast, lunch, dinner and snacks—including fun creations such as bear track cookies, salad people art, soft pretzels and saltwater taffy. All kids and teens are welcome to attend whether or not they’re registered for Club HAL, and teens are also welcome to attend adult culinary demonstrations. Look for class times and topics in daily programs and Club HAL programs during each cruise. Featured Recipe: DUTCH APPLE PANCAKES with maple avored honey Make these deliciously moist pancakes during autumn when apples are crisp and plentiful. ey’re the next best thing to a slice of apple pie for breakfast! Ingredients: (Yield: 8–10 medium pancakes) 1½ cups of flour 1 tablespoon sugar, plus extra for garnish 2½ teaspoons baking powder ½ teaspoon salt 1 teaspoon ground cinnamon 2 eggs 1½ cup milk 3 tablespoons unsalted butter, melted, plus extra for cooking 2 medium apples, peeled, halved and cored, plus 2 more for garnish Preparation: Sift our, 1 tablespoon sugar, baking powder, salt and cinnamon together in a large mixing bowl. Put eggs into a medium mixing bowl and beat until frothy. Add milk to eggs and beat well. Add milk mixture to our mixture and stir to combine. Stir in 3 tablespoons of the melted butter. Using the large holes on a box grater, grate 2 apples into the batter, and stir just to combine. Heat a large cast-iron skillet over medium heat and swirl in some butter. When the butter is hot but not yet brown, make 2 to 3 pancakes at a time by ladling ¼ cup of the batter for each pancake. Cook until bubbles form on tops of pancakes and bottoms turn golden, 2–3 minutes. Flip pancakes and continue cooking until bottoms are golden and centers are cooked through, about 2 minutes more. Repeat process, adding more butter to the pan as necessary. Serve pancakes drizzled with maple honey. Maple Honey: Combine ½ cup maple syrup and ½ cup honey in a small serving pitcher. Gently stir until mixed. Reserve until ready to use. Garnish: Peel, core and slice remaining 2 apples into wedges and sauté in butter with a little sugar until lightly browned. Serve alongside pancakes. 15
