PACKAGING GREENER BOTTLES How Low Can You Go? Beverage companies are finding that less is often more when it comes to packaging. By Andrew Kaplan S ometimes it seems like beverage companies just can’t catch a break. After all, it was one of the industry’s most healthful products—bottled water—that became the focus of negative publicity this past summer. But this time, the hullabaloo wasn’t only about the beverage inside the package, but also about the package itself when the mayors of San Francisco, Salt Lake City, Minneapolis and New York began to urge citizens to forego bottled water for the tap water being delivered straight into their homes. The reason: these particular cities pride themselves—and spend a lot of money on—their municipal water systems and the finished product it delivers. The mayors touted the cleanliness of the local tap water, its good taste, and the fact that it costs citizens pennies compared to the bottled product. “The question to them became, ‘Why are we doing all this if you are all going to run out and buy bottled water and then saddle us with the municipal solid waste from all these empty bottle containers?’” explains Betty McLaughlin, the executive director of the Washington, D.C.based Container Recycling Institute. “It certainly makes sense that at some point the mayors were going to say, ‘Hey, wait a minute.
