The foodservice industry continues to gain momentum, adding
an average of 30,000 jobs per month this year and hiring a total
of 313,000 people in the last year, according to the U.S. Bureau of
Labor Statistics' Current Employment Statistics Survey released Aug.
4. "The employment gain in leisure and hospitality coincides with
the strength seen in the Consumer Confidence Survey in July, which
is at a 16-year high," the report says.
Full-service restaurants account for 47 percent of these new
jobs, fast-food follows at 37 percent and bars at three percent.
Other jobs in foodservice, such as caterers or cafeteria workers,
account for the remaining 13 percent. As employment continues
to grow, it's no wonder food studies programs in higher education
are also on the rise - and have been for the past two decades.
NYU and Boston University were the first two to offer food studies
programs and universities throughout the country followed. Loyola
University New Orleans' College of Arts and Sciences announced it
will launch a food studies program this fall designed around food
policy, commerce and culture.
"So many different aspects of the world around us come together
in a single dish: taste, culture, friendship, the global economy, the
labor that brings ingredients together from the field to the table," Dr.
Daniel Mintz, director of the food studies program, said. "Food is an
incredible teaching tool and there is no better place to study it than
New Orleans."
