KSL Platinum - January 2009 - (Page 4) 8212 Wine Bar & Grill barton CreeK resort & sPa .I.Y GOURMET . 1 2 1 Cup oz oz eggs all Purpose flour Cocoa Cherry Ice Cream Sandwich with ‘Your Favorite Cheesecake’ Shake by Chef Jason Parker Pure decadence! For this sweet treat, you’ll need 2 pints of cherry ice cream and a slice of your favorite cheesecake cut into 16 equal pieces. Freeze the ice cream and cheesecake. Chocolate Frangipan 7 oz almond paste 7 oz granulated sugar 7 oz butter Preheat oven to 350F. butter a 10x15-inch jellyroll pan and line it with parchment paper. in a mixer fitted with a paddle attachment, cream almond paste, half of the sugar and 3-oz butter until smooth and creamy. add the rest of the sugar and butter. Cream until smooth. slowly add eggs, one at a time until fully incorporated. add flour and cocoa until just combined. spread batter into prepared pan. bake approximately 15 minutes or until springy to touch. let cool slightly. invert onto a cutting board. Peel off parchment. Freeze for about and hour. to assemble the ice cream sandwich: allow ice cream to sit at room temperature for about 20 minutes to soften. remove frangipan from freezer. Cut in half. spread ice cream on one of the halves. smooth top. Place other half of frangipan on top. Put back in freezer for about an hour. remove from freezer and cut with a knife dipped in hot water. trim edges. Cut 4 across and 3 down to leave 12 equal pieces. Cut each piece in half diagonally. Freeze until ready to serve. Cherry 1 C ¾C ¼C Compote dried cherries Cranberry juice Kirschwasser ¼ 2 C tb granulated sugar butter bring to simmer all of the ingredients except the butter until the cherries are plump. remove the cherries, set aside. boil syrup until reduced by half and thickened. return cherries to syrup. swirl in butter. Cool. Candied pecans 1 C Pecan halves ½C water 1 C granulated sugar boil sugar and water until candy thermometer reaches 310F. remove from heat. stir in pecans until completely coated. Pour onto baking sheet, keeping the nuts separated. Cool completely. Chop coarsely. Cheesecake shake 1 slice Favorite Cheesecake 4 C vanilla ice cream 2 C Milk to assemble the plate: blend all ingredients until thick and smooth. add more milk if necessary. to serve: pour the shake into an old-fashioned glass, top with fresh mint and add a straw. serve on a plate with 2 halves of the cherry ice cream sandwich topped with the cherry compote and candied pecans. enjoy! 4
