Almost every English language dictionary includes the word as a proprietary term along with other select trademarks, such as Xerox, Kleenex, and Band-Aid. The condiment itself has appeared on dinner tables at the White House, gone to war with U.S. soldiers in their MREs (“Meals Ready to Eat”), and flown into orbit aboard Skylab, the Space Shuttle, and the International Space Station. It has appeared in numerous TV programs and movies, from Charlie Chaplin’s 1917 classic “The Immigrant” to a 1997 TV episode of “The X-Files.” When noted “Dixieologists” John Shelton Reed and Dale Volberg Reed compiled 1001 Things Everyone Should Know About the South, they included Tabasco sauce as one of the region’s major culinary contributions, calling it the “gold standard” of pepper sauces. None of this would be the case if not for a single Louisiana entrepreneur: Edmund McIlhenny, inventor of Tabasco-brand pepper sauce. Although his story has been told countless times in brief by journalists and advertising agents, much of what has been written about Edmund and the early years of Tabasco sauce derived solely from hearsay and legend. Now, however, an examination of Edmund’s business and personal papers in the McIlhenny Company archives has for the first time yielded a more accurate early history of this global culinary icon from rural Louisiana. by Shane K.
