They were the only places in the markets where ordinances permitted cooking facilities — “pour rechauffer le lait,” according to law. This limited exception also opened the door to the preparation of heartier fare under the roofs of the markets. Some coffee stands were like holes-in-the-wall with marbletopped tables suspended between the ponderous columns of the hall. Larger coffee shops, like the Louisiana Coffee Stand in the Poydras Market, were replete with chairs and tables, ceiling fans, barrels of frying oil, frying pans and bread knives, in addition to nickel-plated coffee urns. The Morning Call coffee shop in the French Market, which opened up in one of the niches between the columns as the Morning Star in the 1860s, had expanded by the late 1870s into an emporium with marble slab table tops, mirrors and durable white crockery. The culture of these stands typified the strong association between markets and drinking coffee that was a staple of life in France and all around Europe.
