Broth:
2 quarts water
1 medium onion, sliced
1 bay leaf
1 teaspoon salt
To a six-quart pot, add water, onion, bay
leaf, and salt and bring to a boil. Turn heat
down to simmer, place meatballs in broth,
and simmer gently until they are done,
about 20 minutes. Remove meatballs and
set aside. Strain onion and bay leaf from
broth. Measure out three cups of broth and
reserve.
Lemon-Caper Sauce:
4 tablespoons butter
4 tablespoons all-purpose flour
3 tablespoons fresh lemon juice
2 tablespoons heavy cream
½ teaspoon salt
2 egg yolks
2 tablespoons sour cream
¼ teaspoon black pepper
2 tablespoons capers
2 tablespoons minced fresh parsley
In a large, deep skillet or Dutch oven, melt butter. Add flour,
stirring constantly with a whisk until incorporated into the
butter. Add reserved broth (above) and slowly cook until
thickened. Stir in lemon juice, cream, and salt. Remove from
heat.
In a small bowl, mix egg yolks, sour cream, and pepper. Add

a tablespoon of the sauce to the egg/sour cream mixture
and blend well, making sure the sour cream does not curdle.
Repeat a couple of times, then blend egg/sour cream mixture
into sauce. Slowly bring sauce almost to a boil and add
capers. Return meatballs to the caper sauce and add parsley.
Reduce heat to low, cover, and cook for about 10 minutes.
Serve with boiled potatoes and chopped parsley.
