"I HONESTLY NEVER THOUGHT in
a billion years that I would own
a restaurant," says Diane Elliot,
owner of Local Roots. She bought
the restaurant from her son Rives,
who founded the business in late
2007. "I just believed in it too much
to see it go."
Today, Local Roots is a popular
and thriving farm-to-table restaurant serving what they call
S.O.L.E. food: sustainable, organic,
local and ethical. It is the kind of
food that Elliot has been eating
and serving her family for years.
"There was that connection," she
says, "to my background in healing
and spiritual work."
