Turkey-Portobello Burgers Prep time: 10 minutes, Cook time: 15 minutes INGREDIENTS 1 lb. lean ground turkey breast 1 tsp. garlic powder ¼ tsp. sea salt Freshly ground pepper, to taste 4 large portobello mushrooms, stems removed 2 large tomatoes, sliced 1 medium red onion, thinly sliced Chopped fresh basil Balsamic vinegar (optional) DIRECTIONS 1. Coat grill rack with nonstick cooking spray. Preheat to medium-high (350 to 400 F). In medium bowl, combine ground turkey, garlic powder, salt and freshly ground pepper to taste. Shape into 4 patties 1 ½ inches thick. 2. Grill, covered, 5 minutes per side or until instant-read thermometer registers 165 F. Place portobellos, tomatoes and onion slices on vegetable rack or in grill basket. Grill 2 minutes per side or until lightly charred. Remove from grill. 3. Place turkey burger on each portobello. Top with tomato and onion, sprinkle with basil, and (if desired) drizzle with vinegar. Serve immediately.
