C O M © PRESTON SCHLEBUSCH here’s a reason why wine lists are longer than menus. Whatever you’re eating, the number of wines that could successfully complement it is nearly endless. Books have been written about the art of wine pairing and with a little logic or guidance, you almost can’t go wrong. But what if there’s a special wine you want to build a meal around? It might be a rare bottle that has been slumbering in your basement. Or one on a wine list that brings you back to when you tasted it on your honeymoon. You choose the wine ﬁrst— and you want a meal that will show it to best effect. While there may not be a book for that, it’s something anyone can accomplish. A truism says that you should pair complicated wines with simple food. As with most truisms, it’s only partly true.
