the continental The latest addition to Sydney's cocktail scene is the Roosevelt in Potts Point. Awash in old-world glamour, it sits on the same spot as a club whose guests included Humphrey Bogart, Frank Sinatra and Ava Gardner. With that in mind, bartender Phillip Gandevia created the Continental, inspired by the Fred Astaire and Ginger Rogers song and dance from 1934's The Gay Divorcee. Struck by the lyrics “two bodies swaying” and “a way of dancing that's strictly entre nous,” Gandevia created this riff on a martini. Splitting the base between vodka and 1930s spiritof-choice gin, he tops it with traditional orange bitters, infused with a contemporary smoky flavor. Then, a soupçon of homemade barrel-aged vermouth. “There was a great deal of looking to the future at that time,” says Gandevia. As a nod to that, the martini is chilled in glass pitchers resting in a pan filled with liquid nitrogen. This gets the liquid very cold, very fast. The cocktail is then poured from one pitcher to the other, steam emanating from the mixture mid-air: a barman's dance and a piece of showmanship worthy of Fred and Ginger. _________ 1 oz. gin 1 oz. vodka 10 ml. vermouth 1 bar spoon yellow chartreuse 2 drops smoked orange bitters Liquid nitrogen Combine all ingredients in a glass pitcher resting in a pan of liquid nitrogen, pass it back and forth between a second pitcher and pan and, blue blazer-style, strain into a martini glass.
