PISCO PUNCH Pisco punch During the Gold Rush of the mid-1800s, boats traveling around South America bound for California riches would stop for provisions in 10 Peruvian harbor towns, where they discovered the beguiling grape brandy pisco. The sweet, fiery spirit made its way up to the wilds of San Francisco, where it was quickly put to use to serve thirsty prospectors. Duncan Nicols, charismatic proprietor of the lively bar the Bank Exchange (where the Transamerica Pyramid now stands), created the most widely acknowledged Pisco Punch, a beguiling blend of pineapple and lime juices and gum arabic—all ingredients available due to the era’s vital shipping trade. Nicols’ recipe was a closely guarded secret, and when he died the exact recipe died with him. To further place the drink in historical context: Mark Twain reportedly was drinking one at the Bank Exchange when he struck up a conversation with a mischievous firefighter named Tom Sawyer, who would become the inspiration for Twain's famous character. _________ 1 pineapple Gum arabic syrup* 1 pint distilled water 10 oz. lemon juice 24 oz. pisco Cut the pineapple into squares ½ inch by ½ inch. Soak in a bowl of gum arabic overnight. After at least 12 hours, combine all ingredients in a punch bowl, add large ice cubes for minimum dilution and serve in punch glasses.
