Painterly Palette At the ritz-carlton, hong Kong, dessert tends to occupy a very special place in chefs' minds - and an entirely separate dimension from dinner. by special request, intimate gatherings of up to several dozen guests can be escorted into what's perhaps best described as an artist's studio, where nearly a dozen pastry chefs stand poised, spoon in hand, waiting. As friends and family make their entrance, the chefs commence working in symmetry, drawing fanciful swoops, swirls and flourishes (opposite) in what gradually takes the form of an elaborate design (top right). brandishing cutlery in lieu of paintbrushes, the chefs rely on a palette that comprises the full spectrum of chocolate - from tiramisu to tart, cocoa powder to coulis - as well as splashes of vibrant raspberry and mango coulis. intricate pudding-like spheres (bottom right), crumbles and fresh berries also make an ephemeral appearance before being spooned up by appreciative guests.
