Seemingly overnight, Carrie Underwood went from small-town girl who had never been on a plane to country music megastar. The blond beauty was a senior at Northeastern State University in Tahlequah, Okla., studying broadcast journalism when she decided to audition for Simon Cowell, Paula Abdul and Randy Jackson, the judges of the hit show American Idol at the time. The trip to Hollywood was her ﬁrst plane ﬂight. Since that audition, she’s been unstoppable. American Idol winner in 2005, Underwood since has sold more than 10 million CDs and has been inducted into the Grand Ole Opry. Plus, her trophy case must be nearly full—she has picked up numerous accolades from the Academy of Country Music, the Country Music Awards, the Grammys and more. (She even went back to school and earned her college degree.) Being on the road for concerts, magazine photo shoots, award shows and publicity events keeps the 28-year-old Underwood busy—never mind time spent recording and time with her new husband, Mike Fisher, a hockey player with the Nashville Predators. Still, the starlet knows the importance of ﬁnding time to eat well and exercise. Combining a vegetarian lifestyle with an exercise and health regimen that she can maintain at home or on the road keeps Underwood healthy and beaming. It’s a modern-day fairy tale.
